Итальянский специалитет полента - возможность одновременно удовлетворить голод, тягу к полезным продуктам и страсть к творчеству

К «пище бедняков» я всегда относился двояко. С одной стороны, картошка, пицца, руккола, рис или грибы позволяют, в основном, задешево набить желудок. С другой стороны, в наш век продуктового изобилия и ощутимого повышения благосостояния люди продолжают все это с радостью потреблять. С третьей стороны, «бедный продукт» словно специально создан для того, чтобы замаскировать собственную незнатность, сдобрить ее чем-то. То есть заставляет кулинара проявить смекалку и фантазию. Взять ту же поленту. В XVII веке на нее молились все бедняки Италии - крупа из кукурузы, завезенной на европейский континент, позволяла наесться досыта за сущие гроши. Это раньше те же немцы удивлялись: почему итальянцы едят столько травы?.. Сейчас ее политкорректно принято называть «зеленью»: одних видов листовых салатов на Аппенинском полуострове даже сейчас насчитывается около трехсот, а можно представить, сколько было тогда. И ели-то ее от голода (вот она, трава, под ногами и ничего не стоит), а вовсе не потому, что «издревле итальянцы понимали полезность средиземноморской диеты» - как сейчас любят запудривать мозги диетологи.
Полента, конечно, не трава. Зерном за один раз на целый день наесться можно, но есть год за годом кукурузную крупу на воде - это, мягко говоря, утомляет. Да и где тут творческий подход, без которого итальянец не итальянец? Бедный люд начал крошить в поленту лук, сыр, траву (трехсот видов), добавлять оливковое масло. В XIX веке гарибальдисты, интеллигенция и прогрессивное дворянство ввели моду на «народную жизнь» (в то время это была общая европейская мода, можно вспомнить русских народников). А потому не только в спагетти, но и в кукурузную крупу у них посыпался, например, мясной фарш, а сама полента стала в рационе «народников» хоть и не основным блюдом, но гарниром к дичи, птице, рыбе.
В наши дни поленту воспринимают как простую в приготовлении, да еще и прекрасно сочетающуюся почти со всеми видами продуктов крупу. Да к тому же не слишком калорийную (с манкой, во всяком случае, не сравнить), недорогую и содержащую много клетчатки, витаминов Е, Bl, В2 и РР, кальция, магния, цинка и фосфора. И, что очень важно для людей с ферментативной недостаточностью кишечника, в кукурузе отсутствует белковая фракция глиадина. В отличие от всех злаковых.
В классических итальянских рецептах полента выступает не в роли каши-размазни или рассыпчатой каши. Полента там словно сырье для скульптора. Из сваренной кукурузной крупы принято формировать лепешки, «котлетки», брусочки и прочие геометрические фигурки. Считается, что пространство между ними в котле можно заполнять вкусной всячиной, которая пропитает поленту своим духом и соками, но при этом ее сердцевина не будет затронута добавками, сохранит вкусовую нейтральность, сыграющую на контрасте двух (трех, пяти или более) продуктов.
В общем, сначала надо приготовить полуфабрикат - геометрические фигурки из поленты. Насыпьте ее в толстостенную посуду с таким расчетом, [тобы на стакан кукурузной крупы приходился стакан воды], и варите минут 40—45, постоянно помешивая. Выключаете огонь, остужаете, лепите из получившегося месива все что душе угодно, хоть Петра работы Церетели, только не очень боль- размеров (как не бывают большими котлеты : тефтели). А потом, чередуя слои, облагораживаете фигурки из поленты чем-то таким, что вы больше, всего любите. Единственное условие: это должно быть уже почти приготовленным за*. 5 или 7 минут до финала. Лично я погружаю в котел бараньи ребрышки, до этого часа полтора тушившиеся с луком, помидорами и пряными травами (в числе которых главный - розмарин). И минут на 10 ставите это в посудине, плотно прикрытой крышкой, в разогретую духовку.
В непритязательных итальянских харчевнях для изголодавшихся посетителей с бюджетом до 10 евро облагораживание поленты происходит еще проще. Помидоры, лук, оливковое масло, травы, чеснок поджаривают на сковородке почти до готовности. Потом кастрюльку вынимают из духовки, посыпают полупригоршней тертого пармезана. Иногда очень приятно бывает прикоснуться к кулинарным корням.

стакан поленты средних помидоров средняя луковица 3 зубчика чеснока ст. л. оливкового масла ч. л. тертого пармезана (по желанию) чабер, орегано, базилик
В толстостенной сковороде раскалите оливковое масло, положите туда измельченный зубчик чеснока и держите его в масле, пока он не станет прозрачным. Извлеките чеснок и положите в масло измельченные помидоры без шкурки, мелко нарезанную луковицу, оставшийся чеснок. И держите на медленном огне. За несколько минут до готовности добавьте измельченные травы. Сварите поленту, посолив по вкусу, сформируйте из нее 8 «тефтелей». Залейте этим соусом «тефтели» из поленты В каждой порции - 220 ккал.
